- Preheat oven to 400Β°F (200Β°C). In a skillet, heat olive oil π« over medium-high heat π₯. Season chicken breasts π with salt π§ and pepper πΆοΈ, then sear for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add sliced potatoes π₯ and season with salt π§, pepper πΆοΈ, and dried thyme πΏ. Cook for 5 minutes until slightly tender.
- Add minced garlic π§ and sautΓ© for 1 minute. Pour in heavy cream π₯ and sprinkle Parmesan cheese π§ over the potatoes. Stir to combine.
- Place chicken breasts π on top of the potatoes π₯. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is fully cooked and the potatoes are crispy.
- Garnish with fresh parsley πΏ and serve.
