Directions ๐จโ๐ณ:
- Preheat oven to 400ยฐF (200ยฐC). In a skillet, heat olive oil ๐ซ over medium-high heat ๐ฅ. Season chicken breasts ๐ with salt ๐ง and pepper ๐ถ๏ธ, then sear for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add sliced potatoes ๐ฅ and season with salt ๐ง, pepper ๐ถ๏ธ, and dried thyme ๐ฟ. Cook for 5 minutes until slightly tender.
- Add minced garlic ๐ง and sautรฉ for 1 minute. Pour in heavy cream ๐ฅ and sprinkle Parmesan cheese ๐ง over the potatoes. Stir to combine.
- Place chicken breasts ๐ on top of the potatoes ๐ฅ. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is fully cooked and the potatoes are crispy.
- Garnish with fresh parsley ๐ฟ and serve.
