- Preheat the oven to 375Β°F (190Β°C).
- Grease a 9Γ13-inch baking dish with olive oil or butter. π§π½οΈ
2οΈβ£ Make the Cheese Sauce:
- Heat olive oil and butter in a saucepan over medium heat. π«π§
- Add shallots, garlic, thyme, rosemary, chili flakes, salt, and pepper. SautΓ© for 5 minutes until fragrant. πΏπ§
- Remove garlic cloves and discard.
- Whisk in the flour and cook for 1 minute. Gradually add milk and broth, whisking constantly. π₯
- Bring to a boil, stirring for 2-3 minutes. Remove from heat and mix in provolone and 1/2 cup of parmesan until melted and smooth. π§β¨
3οΈβ£ Assemble the Lasagna:
- Spread 1/4 of the cheese sauce on the bottom of the baking dish. πΆ
- Layer 3-4 lasagna noodles on top. π
- Spread 1/2 the pesto and sprinkle with spinach. πΏ
- Add another 1/4 of the cheese sauce. Repeat the layers: noodles, remaining pesto, spinach, and cheese sauce.
- Finish with a final layer of noodles, remaining cheese sauce, and 1/2 cup parmesan on top. π§

- Uncover and bake for an additional 15 minutes until the top is golden brown. β¨
- Let the lasagna rest for 10 minutes before serving. π
