1️⃣ Preheat & Prep:

  • Preheat the oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish with olive oil or butter. 🧈🍽️

2️⃣ Make the Cheese Sauce:

  • Heat olive oil and butter in a saucepan over medium heat. 🫒🧈
  • Add shallots, garlic, thyme, rosemary, chili flakes, salt, and pepper. Sauté for 5 minutes until fragrant. 🌿🧄
  • Remove garlic cloves and discard.
  • Whisk in the flour and cook for 1 minute. Gradually add milk and broth, whisking constantly. 🥛
  • Bring to a boil, stirring for 2-3 minutes. Remove from heat and mix in provolone and 1/2 cup of parmesan until melted and smooth. 🧀✨

3️⃣ Assemble the Lasagna:

  • Spread 1/4 of the cheese sauce on the bottom of the baking dish. 🍶
  • Layer 3-4 lasagna noodles on top. 🍝
  • Spread 1/2 the pesto and sprinkle with spinach. 🌿
  • Add another 1/4 of the cheese sauce. Repeat the layers: noodles, remaining pesto, spinach, and cheese sauce.
  • Finish with a final layer of noodles, remaining cheese sauce, and 1/2 cup parmesan on top. 🧀

4️⃣ Bake:

  • Cover the dish with foil and bake for 30 minutes until bubbling. 🔥
  • Uncover and bake for an additional 15 minutes until the top is golden brown. ✨
