- Preheat the Oven π₯
- Preheat your oven to 450Β°F (230Β°C). Line a baking sheet with parchment paper or aluminum foil.
- Prepare the Marinade π«
- In a small bowl, mix olive oil, garlic, rosemary, thyme, Dijon mustard, salt, and pepper.
- Season the Lamb π
- Pat the lamb racks dry with paper towels. Rub the marinade evenly over both sides of the lamb.
- Optional: Sear the Lamb π³
- Heat a skillet over medium-high heat. Sear the lamb, fat side down, for 2β3 minutes until golden brown.
- Roast the Lamb π
- Place the racks of lamb on the prepared baking sheet, fat side up. Roast in the oven for 20β30 minutes, depending on your preferred doneness:
- 125Β°F (52Β°C): Rare
- 135Β°F (57Β°C): Medium-rare
- 145Β°F (63Β°C): Medium

- Rest the Lamb β³
- Remove the lamb from the oven and let it rest for 10 minutes before slicing.
