1οΈβ£ Prepare the Meat Mixture:
In a large bowl, mix together the beaten eggs and tomato juice. Stir in the bread crumbs, parsley, minced garlic, oregano, salt, and pepper. Add the ground beef and mix thoroughly until the ingredients are well combined.
2οΈβ£ Shape and Fill the Meat Roll:
On a piece of foil or waxed paper, pat and shape the meat mixture into a 10×8 inch rectangle. Place the prosciutto slices on top of the meat, leaving a small margin around the edges. Tear the mozzarella slices (reserve one slice) and evenly distribute them over the prosciutto.
3οΈβ£ Roll the Meat:
Starting from the short end, carefully roll up the meat mixture, using the foil or waxed paper to help guide the roll. Seal the edges and ends to encase the filling completely.
4οΈβ£ Bake the Meat Roll:
Preheat your oven to 350Β°F (175Β°C). Place the meat roll, seam side down, in a 9×13 inch baking dish. Bake for about 1 hour and 15 minutes.
5οΈβ£ Add Cheese Topping:
Cut the reserved mozzarella slice into 4 triangles. After baking for 1 hour and 15 minutes, place the cheese triangles on top of the meat roll, overlapping them slightly. Return to the oven for another 2 minutes, or until the cheese melts.
6οΈβ£ Serve:
Remove from the oven and let the meat roll rest for a few minutes. Slice and serve hot with warmed marinara sauce on the side.
