Ingredients:
For the Salmon:

  • 2 salmon fillets (skin-on, ~150 g each) ๐ŸŸ
  • 1 tablespoon olive oil ๐Ÿซ’
  • Juice of 1/2 lemon ๐Ÿ‹
  • 1 teaspoon smoked paprika ๐ŸŒถ๏ธ
  • Salt and freshly ground black pepper ๐Ÿง‚๐Ÿ–ค

For the Quinoa Base:

  • 1/2 cup quinoa (tri-color or white) ๐Ÿš
  • 1 cup water or vegetable broth ๐Ÿฅฃ
  • 1/2 cup green peas (fresh or frozen) ๐Ÿฅฌ
  • 1 cup roasted butternut squash cubes ๐Ÿ 

For the Avocado Cream:

  • 1 ripe avocado ๐Ÿฅ‘
  • Juice of 1/2 lime ๐Ÿˆ
  • 1 tablespoon Greek yogurt ๐Ÿถ
  • Salt and black pepper to taste ๐Ÿง‚๐Ÿ–ค
