Preheat your oven to 350Β°F (175Β°C). Line baking sheets with parchment paper.
πΉ 2οΈβ£ Cream the Butter & Sugar
In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
πΉ 3οΈβ£ Add the Eggs & Vanilla
Beat in the eggs one at a time, then mix in the vanilla extract until well incorporated.
πΉ 4οΈβ£ Prepare the Dry Ingredients
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
πΉ 5οΈβ£ Add the Good Stuff!
Fold in the white chocolate chips and Biscoff cookie crumbs, making sure they are evenly distributed in the dough.
πΉ 6οΈβ£ Shape the Cookies
Scoop out cookie dough and place on the prepared baking sheets, leaving some space between each. Gently press a Biscoff cookie on top of each dough ball.
πΉ 7οΈβ£ Bake to Perfection
Bake for 10-12 minutes, or until the edges are lightly golden but the center is still soft.

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
