๐น 1๏ธโฃ Preheat the Oven
Preheat your oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
๐น 2๏ธโฃ Cream the Butter & Sugar
In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
๐น 3๏ธโฃ Add the Eggs & Vanilla
Beat in the eggs one at a time, then mix in the vanilla extract until well incorporated.
๐น 4๏ธโฃ Prepare the Dry Ingredients
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
๐น 5๏ธโฃ Add the Good Stuff!
Fold in the white chocolate chips and Biscoff cookie crumbs, making sure they are evenly distributed in the dough.
๐น 6๏ธโฃ Shape the Cookies
Scoop out cookie dough and place on the prepared baking sheets, leaving some space between each. Gently press a Biscoff cookie on top of each dough ball.
๐น 7๏ธโฃ Bake to Perfection
Bake for 10-12 minutes, or until the edges are lightly golden but the center is still soft.

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
