🔪 Instructions
1️⃣ Make the Homemade Salted Caramel:
🔥 Have all ingredients ready beforehand, as caramel needs to be mixed while hot!
1️⃣ Warm the heavy cream in the microwave if it’s too cold.
2️⃣ In a saucepan, combine sugar and water without stirring.
3️⃣ Heat over medium heat until the mixture changes color from clear to golden to deep amber.
4️⃣ Remove from heat and whisk in butter.
5️⃣ Slowly pour in the heavy cream while whisking continuously.
6️⃣ Stir in vanilla and salt, then return to the heat for 2 more minutes.
7️⃣ Remove from heat and whisk in the flour. Set aside to cool slightly.
2️⃣ Prepare the Oatmeal Cookie Dough:
1️⃣ In a bowl, whisk together oats, flour, baking powder, and salt.
2️⃣ In a separate bowl, cream butter and brown sugar until fluffy.
3️⃣ Mix in eggs and vanilla, beating until combined.
4️⃣ Gradually add the dry ingredients, stirring gently.
5️⃣ Fold in chocolate chips and chopped nuts.
3️⃣ Assemble & Bake:
1️⃣ Spread half of the cookie dough into a lined baking pan.
2️⃣ Pour the salted caramel evenly over the dough.
3️⃣ Crumble the remaining dough on top, gently pressing it down.
4️⃣ Bake at 350°F (175°C) for 25–30 minutes, until the edges turn golden.
5️⃣ Sprinkle with flaky sea salt, let cool, then slice into bars.
