2οΈβ£ In a saucepan, combine sugar and water without stirring.
3οΈβ£ Heat over medium heat until the mixture changes color from clear to golden to deep amber.
4οΈβ£ Remove from heat and whisk in butter.
5οΈβ£ Slowly pour in the heavy cream while whisking continuously.
6οΈβ£ Stir in vanilla and salt, then return to the heat for 2 more minutes.
7οΈβ£ Remove from heat and whisk in the flour. Set aside to cool slightly.
2οΈβ£ Prepare the Oatmeal Cookie Dough:
1οΈβ£ In a bowl, whisk together oats, flour, baking powder, and salt.
2οΈβ£ In a separate bowl, cream butter and brown sugar until fluffy.
3οΈβ£ Mix in eggs and vanilla, beating until combined.
4οΈβ£ Gradually add the dry ingredients, stirring gently.
5οΈβ£ Fold in chocolate chips and chopped nuts.
3οΈβ£ Assemble & Bake:
1οΈβ£ Spread half of the cookie dough into a lined baking pan.
2οΈβ£ Pour the salted caramel evenly over the dough.
3οΈβ£ Crumble the remaining dough on top, gently pressing it down.
4οΈβ£ Bake at 350Β°F (175Β°C) for 25β30 minutes, until the edges turn golden.
5οΈβ£ Sprinkle with flaky sea salt, let cool, then slice into bars.
