🔥 Instructions
1️⃣ Prepare the Filling
🍳 Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3-4 minutes.
🍄 Add mushrooms and cook until they release their moisture and turn golden brown, about 6-8 minutes.
🧄 Stir in garlic, thyme, salt, and pepper, and cook for another minute. Remove from heat and let cool.
🧀 Mix in goat cheese until the filling is smooth and combined.
2️⃣ Prepare the Pastry
🔥 Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
🍞 Roll out puff pastry on a lightly floured surface and cut into 6 equal squares.
3️⃣ Assemble the Pastries
🥄 Spoon the mushroom and goat cheese filling into the center of each pastry square.
👉 Fold the corners of the pastry towards the center and pinch to seal, or fold over to create a triangle.
🍳 Brush the tops with the beaten egg for a golden finish.
4️⃣ Bake
🔥 Bake for 18-22 minutes, or until the pastries are puffed and golden brown.
5️⃣ Serve
🍽️ Let cool slightly before serving.
🌿 Garnish with fresh thyme or parsley for a burst of flavor and a beautiful presentation.
