- Prepare the Lemon Herb Butter: In a bowl, combine softened butter, lemon zest, parsley, thyme, minced garlic, and a pinch of salt. Stir until well-mixed and set aside.
- Cook the Steaks: Season both sides of the ribeye steaks generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 4-5 minutes per side for medium-rare, or longer depending on your desired doneness. Once cooked, remove from heat and top each steak with a generous dollop of the lemon herb butter. Allow it to melt over the steaks.
- Make the Mashed Potatoes: Boil the peeled and cubed potatoes in salted water for 15-20 minutes or until tender. Drain well, return to the pot, and mash with milk and butter until smooth and fluffy. Season with salt and pepper to taste.
- Serve: Plate the steaks with a side of creamy mashed potatoes. Drizzle any leftover melted herb butter from the pan over the steak and potatoes for extra flavor.
