- Preheat the oven to 375Β°F (190Β°C).
- Prepare the stuffing by combining the shredded mozzarella, softened cream cheese, minced garlic, Italian seasoning, salt, pepper, and half of the chopped parsley in a bowl. Mix until smooth and well combined.
- Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Fill each pocket generously with the cheesy garlic mixture, pressing it in firmly to avoid spillage during cooking.
- Heat the olive oil in a large skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish. For an extra crunchy finish, sprinkle breadcrumbs over the top of each piece.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165Β°F (75Β°C).
- Once done, let the chicken rest for a few minutes before serving to allow the juices to redistribute.
- Garnish with the remaining chopped parsley and serve hot.
