- Start by preparing your ingredients. If using frozen corn, rinse briefly and let it thaw π½.
- Heat olive oil π’οΈ in a non-stick skillet over medium heat.
- Crack the eggs π³ into the skillet, seasoning with salt, pepper, and chili powder πΆοΈ (optional). Cook for 3-5 minutes until the whites are set and the yolks are cooked as you like.
- While the eggs cook, halve the avocado π₯, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, adding lime juice π and salt π§ for flavor.
- Once the eggs are done, add the corn π½ to the skillet and sautΓ© for 2-3 minutes, or until warmed through.
- To assemble, spread the mashed avocado π₯ on a plate, top with the sautΓ©ed corn π½, and place the eggs π³ on top.
- Garnish with cilantro πΏ and an extra squeeze of lime π if desired.
