1. Prepare the Steaks:
Pat the ribeye steaks dry with a paper towel ๐งป.
Generously season both sides with salt ๐ง and freshly ground black pepper ๐ถ๏ธ.
2. Heat the Skillet:
Heat olive oil ๐ข๏ธ in a large cast-iron skillet over medium-high heat ๐ฅ until shimmering.
3. Sear the Steaks:
Add the steaks ๐ฅฉ to the skillet and sear for 3-4 minutes on each side, depending on your preferred doneness. For medium-rare, cook until the internal temperature reaches 135ยฐF (57ยฐC) ๐ก๏ธ.
4. Add Garlic Butter & Herbs:
Reduce the heat to medium ๐ฅ and add butter ๐ง, minced garlic ๐ง, rosemary ๐ฟ, and thyme ๐ฟ to the skillet.
Tilt the pan slightly and spoon the melted butter and herbs over the steaks, basting them continuously for 1-2 minutes โฑ๏ธ.
5. Rest the Steaks:
Remove the steaks ๐ฅฉ from the skillet and let them rest on a plate for 5 minutes to retain their juices ๐ง.
6. Add Lemon Juice:
Squeeze the juice of 1/2 lemon ๐ over the steaks for a bright, tangy finish ๐.
7. Serve and Enjoy:
Plate the steaks ๐ฅฉ, drizzle with the remaining garlic butter from the skillet ๐ง, and serve hot with your favorite sides ๐ฝ๏ธ.
