🍽️ Instructions:

1. 🔥 Preheat the oven:
   Set your oven to 400°F (200°C).
2. 🍳 Cook the veggies:
   Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook for about 5 minutes, until softened. Then, add chopped spinach and cook until wilted. 🌱🍄
3. 🧄 Season:
   Stir in garlic powder, salt, and pepper to taste. Mix well and remove from heat.
4. 🧀 Layer the quesadilla:
   Place one tortilla in a baking dish. Add a layer of shredded cheese, then top with the spinach and mushroom mixture. Add another layer of cheese. 🧀
5. 🌯 Stack the tortillas:
   Place a second tortilla on top. Repeat the layering process with additional tortillas, cheese, and filling if desired. 🌮
6. 🧑‍🍳 Bake:
   Bake in the preheated oven for 15-20 minutes, until the tortillas are crispy and the cheese is melted. 🧀🔥
