- Prepare the Roasted Potatoes:
- Preheat the oven to 400Β°F (200Β°C).
- Toss the halved baby potatoes with olive oil, garlic powder, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
- Prepare the Chicken Strips:
- In one bowl, combine breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken strip into the eggs, then coat with the breadcrumb mixture.
- Fry the strips in hot oil for 4-5 minutes until golden and cooked through, or bake at 400Β°F (200Β°C) for 20-25 minutes, flipping halfway through.
- Make the Honey Mustard Sauce:
- In a small bowl, mix Dijon mustard, honey, mayonnaise, and garlic powder until smooth.
- Assemble and Serve:
- Place the crispy chicken strips and roasted potatoes in a basket or serving dish.
- Garnish with chopped parsley and serve with the honey mustard sauce.
