• 1 shallot, chopped 🧅
• 3 garlic cloves, smashed 🧄
• 2 tsp dried thyme 🌿
• 1 tsp dried rosemary 🌱
• A pinch of kosher salt 🧂 and black pepper 🌶️

🌟 Cheese Sauce:

• 1/4 cup all-purpose flour 🌾
• 2 cups whole milk 🥛
• 2 cups vegetable broth 🥣
• 2 cups shredded provolone 🧀
• 1 cup grated parmesan 🧀

🌟 Layering:

• 1 1/2 cups basil pesto 🌿
• 2 packs (10 oz each) frozen spinach, thawed and drained 🌱
