- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, and garlic powder ๐ง๐ถ๏ธ๐ง.
- Heat olive oil in a large skillet over medium heat ๐ซ๐ฅ.
- Cook the chicken breasts for about 6-7 minutes per side, until golden brown and cooked through (internal temperature of 165ยฐF or 74ยฐC) ๐.
- Once cooked, remove the chicken from the skillet and set aside to rest.
 
- Make the Creamed Spinach, Bacon, and Mushrooms:
- In the same skillet, add the chopped bacon ๐ฅ and cook over medium heat until crispy, about 4-5 minutes. Remove the bacon and set aside, leaving the bacon drippings in the pan ๐ณ.
- In the same skillet, add the sliced mushrooms ๐ and cook for about 5 minutes, until theyโre softened and lightly browned.
- Add the minced garlic and cook for another minute until fragrant ๐ง.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes ๐ฅฌ.
- Pour in the heavy cream and bring it to a gentle simmer ๐ฅ.
- Stir in the Parmesan cheese and dried thyme ๐ฟ๐ง. Continue cooking until the sauce thickens, about 3-4 minutes. Season with salt and pepper to taste ๐ง๐ถ๏ธ.
- Add the cooked bacon back into the skillet and stir to combine ๐ฅ.
 
- Assemble the Dish:
- Return the cooked chicken breasts to the skillet, nestling them into the creamy spinach, bacon, and mushroom mixture ๐.
- Spoon the sauce over the chicken and let it simmer for another 2-3 minutes to combine all the flavors ๐ฝ๏ธ.
 
- Serve:
- Serve the smothered chicken hot, garnished with extra fresh herbs or a sprinkle of Parmesan if desired ๐ง๐ฟ.
- Pair with a side of mashed potatoes, rice, or a simple green salad for a complete meal ๐ฅ๐.
