- Prepare the Steak:
 Season the steak with salt, pepper, smoked paprika, and cumin. Heat olive oil in a skillet over medium heat. Cook the steak for 2-3 minutes on each side (or adjust to your preferred doneness). Let it sit for 5 minutes before slicing into thin strips. ๐ฅ๐ฅฉ
- Cook the Vegetables:
 In the same pan, add a little more oil if needed and sautรฉ the onions, peppers, and garlic for 5 minutes until tender and slightly golden brown. Set aside. ๐ง ๐ถ๏ธ๐ง
- Assemble the Quesadillas:
 Place a tortilla on a flat surface and sprinkle a layer of grated cheese on half. Add the steak slices, sautรฉed veggies, and a little more cheese on top. Fold the tortilla in half to form a crescent moon. Repeat with the remaining tortillas. ๐ฎ๐ง๐ฅฉ
- Grill the Quesadillas:
 Heat a nonstick skillet over medium heat and melt butter. Cook each quesadilla for 2-3 minutes on each side until golden brown and crispy, and the cheese is melted. ๐ง๐ฅ
- Serve:
 Slice the quesadillas into triangles. Top with fresh cilantro (optional) and serve hot with sour cream, salsa, or guacamole. ๐ฟ๐ ๐ฅ
