- Preheat the oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper or lightly grease with olive oil spray.
- Pulse the cauliflower in a food processor until it resembles rice grains. Work in batches if needed.
- Microwave the cauliflower “rice” for 5-7 minutes, then let it cool.
- Sautรฉ the spinach in a pan with a bit of olive oil until wilted (2-3 minutes). For frozen spinach, thaw and drain excess water.
2๏ธโฃ Mix the Ingredients:
- Once the cauliflower has cooled, place it in a clean kitchen towel and squeeze out all excess moisture.
- In a bowl, mix the cauliflower, spinach, egg, mozzarella, flaxseed, garlic powder, onion powder, cumin, salt, and pepper. Stir well.
3๏ธโฃ Shape the Taco Shells:
- Divide the mixture into 6-8 portions.
- Press each portion into a circle on the baking sheet, shaping into small ovals or taco-sized shells. Use a spatula to flatten and smooth.

- Bake for 20-25 minutes, flipping halfway, until golden and slightly crisp.
- Let cool for a few minutes before assembling.
