1️⃣ Prepare the Cauliflower & Spinach Mixture:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease with olive oil spray.
  2. Pulse the cauliflower in a food processor until it resembles rice grains. Work in batches if needed.
  3. Microwave the cauliflower “rice” for 5-7 minutes, then let it cool.
  4. Sauté the spinach in a pan with a bit of olive oil until wilted (2-3 minutes). For frozen spinach, thaw and drain excess water.

2️⃣ Mix the Ingredients:

  1. Once the cauliflower has cooled, place it in a clean kitchen towel and squeeze out all excess moisture.
  2. In a bowl, mix the cauliflower, spinach, egg, mozzarella, flaxseed, garlic powder, onion powder, cumin, salt, and pepper. Stir well.

3️⃣ Shape the Taco Shells:

  1. Divide the mixture into 6-8 portions.
  2. Press each portion into a circle on the baking sheet, shaping into small ovals or taco-sized shells. Use a spatula to flatten and smooth.

4️⃣ Bake the Taco Shells:

  1. Bake for 20-25 minutes, flipping halfway, until golden and slightly crisp.
  2. Let cool for a few minutes before assembling.
