Prepare the Filling

  1. In a double boiler, mix together the light brown sugar, cornstarch, salt, and milk.
  2. Cook over medium heat, stirring constantly, until the mixture begins to thicken (about 20 minutes).

Add the Egg Yolks

  1. Gradually whisk in the beaten egg yolks.
  2. Continue cooking and stirring until the mixture reaches a smooth, custard-like consistency.

Preheat the Oven

  1. While the filling cooks, preheat your oven to 400°F (200°C).

Finish the Filling

  1. Remove the thickened mixture from the heat and stir in the butter and vanilla extract until fully blended.

Assemble and Bake

  1. Pour the prepared butterscotch filling into the pre-baked pie crust.
  2. Place the pie in the oven and bake for about 5 minutes, or until the top of the filling turns a light golden brown.
