- Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.
- In a bowl, mix together sautéed spinach, cream cheese, mozzarella, minced garlic, salt, and pepper to make the filling.
- Cut a pocket in each salmon fillet and stuff it with the spinach mixture. Place the stuffed fillets in the prepared baking dish.
- Heat olive oil in a skillet over medium heat and sear the salmon fillets for 2-3 minutes on each side. Then transfer the fillets to the oven and bake for 10-12 minutes or until fully cooked.
- In the same skillet, melt butter over medium heat. Add the minced garlic and cook for about 1 minute. Stir in the heavy cream, Parmesan cheese, lemon juice, salt, and pepper. Simmer for 3-4 minutes until the sauce thickens slightly.
- Pour the creamy sauce over the baked salmon fillets and garnish with fresh parsley and lemon wedges.
