  1. Preheat your oven to 400°F (200°C).
  2. Prepare the mushrooms: Place the mushrooms in a microwave-safe bowl and microwave for 2 ½ to 3 minutes to soften. Drain and set aside.
  3. Assemble the quesadillas: Lightly brush one side of each tortilla with olive oil (optional). Place them on a baking sheet with the oiled side down.
  4. Layer the filling: Sprinkle half of each cheese over half of the tortillas. Add the spinach and mushrooms, then top with the remaining cheese. Fold the tortilla in half.
  5. Bake: Bake for about 6 minutes, then flip each tortilla and bake for another 6-7 minutes until the cheese is melted and the tortillas are golden and crispy.
