  1. Prepare the Potatoes:
    Preheat the oven to 400Β°F (200Β°C) and lightly grease a baking dish.
    Boil the diced potatoes in salted water for about 15 minutes until fork-tender. Drain well.
    Mash the potatoes with milk, half of the shredded cheese, salt, and pepper until creamy. Spread this cheesy potato layer evenly into the prepared dish.
  2. Sear the Pork Chops:
    Heat olive oil in a skillet over medium-high heat. Season the pork chops on both sides with paprika, salt, and pepper.
    Sear the pork chops in the skillet for 3-4 minutes on each side until golden brown. Remove the chops and set aside.
  3. Infuse with Garlic:
    In the same skillet, add the minced garlic to the remaining oil and sautΓ© for 1 minute until fragrant. Pour the garlic-infused oil over the seared pork chops.
  4. Assemble & Bake:
    Place the seared pork chops on top of the mashed potato layer. Sprinkle the remaining shredded cheese over the dish.
    Bake in the oven for 20-25 minutes, or until the pork is fully cooked and the cheese is melted and golden brown.
  5. Serve:
    Let the casserole sit for a few minutes to cool slightly. Garnish with chopped parsley if desired, and serve warm.
