Instructions:

  1. Prepare the Steaks:
    • Take the ribeye steaks out of the fridge and let them come to room temperature for about 30 minutes before cooking.
  2. Preheat the Grill/Skillet:
    • Preheat your grill or cast iron skillet over high heat. In the meantime, generously season both sides of the ribeyes with coarse salt and freshly ground black pepper.
  3. Grill the Steaks:
    • Brush the ribeyes with olive oil and place them on the hot grill or skillet. Cook for 4-5 minutes on each side for medium doneness, or until they reach your desired level of doneness.
  4. Make the Garlic Herb Butter:
    • While the steaks are cooking, melt the butter in a small skillet over medium heat. Add the minced garlic and chopped herbs (parsley and rosemary) and cook for 1-2 minutes, or until the garlic is fragrant.
  5. Rest and Serve:
    • Remove the steaks from the grill and let them rest for about 5 minutes. Drizzle the garlic butter and herb mixture over the steaks before serving.
