- Lay the butterflied steak flat on a cutting board and gently pound it to about 1/4-inch thickness. Season both sides with garlic powder, Italian seasoning, paprika, salt, and pepper.
- Layer the spinach leaves, roasted red peppers, and mozzarella cheese on the steak, leaving a small border to prevent spilling when rolling.
- Roll the steak tightly starting from one long edge. Secure it with kitchen twine or toothpicks to hold the shape while cooking.
- Preheat the grill to medium-high heat (about 400°F/200°C). Brush the steak rolls with olive oil. Place the pinwheels seam-side down on the grill and cook for 3-4 minutes per side, rotating gently for even cooking. Grill until the internal temperature reaches 130°F (54°C) for medium-rare, or to your preferred doneness.
- Remove the pinwheels from the grill and let them rest for 5 minutes. After resting, remove the twine or toothpicks and slice into 1-inch thick rounds.
