- Lay the butterflied steak flat on a cutting board and gently pound it to about 1/4-inch thickness. Season both sides with garlic powder, Italian seasoning, paprika, salt, and pepper.
- Layer the spinach leaves, roasted red peppers, and mozzarella cheese on the steak, leaving a small border to prevent spilling when rolling.
- Roll the steak tightly starting from one long edge. Secure it with kitchen twine or toothpicks to hold the shape while cooking.
- Preheat the grill to medium-high heat (about 400Β°F/200Β°C). Brush the steak rolls with olive oil. Place the pinwheels seam-side down on the grill and cook for 3-4 minutes per side, rotating gently for even cooking. Grill until the internal temperature reaches 130Β°F (54Β°C) for medium-rare, or to your preferred doneness.
- Remove the pinwheels from the grill and let them rest for 5 minutes. After resting, remove the twine or toothpicks and slice into 1-inch thick rounds.
- Arrange the steak pinwheels on a platter and garnish with fresh parsley. Serve with a side salad, roasted veggies, or mashed potatoes for a complete meal.
