  1. Lay the butterflied steak flat on a cutting board and gently pound it to about 1/4-inch thickness. Season both sides with garlic powder, Italian seasoning, paprika, salt, and pepper.
  2. Layer the spinach leaves, roasted red peppers, and mozzarella cheese on the steak, leaving a small border to prevent spilling when rolling.
  3. Roll the steak tightly starting from one long edge. Secure it with kitchen twine or toothpicks to hold the shape while cooking.
  4. Preheat the grill to medium-high heat (about 400°F/200°C). Brush the steak rolls with olive oil. Place the pinwheels seam-side down on the grill and cook for 3-4 minutes per side, rotating gently for even cooking. Grill until the internal temperature reaches 130°F (54°C) for medium-rare, or to your preferred doneness.
  5. Remove the pinwheels from the grill and let them rest for 5 minutes. After resting, remove the twine or toothpicks and slice into 1-inch thick rounds.
  6. Arrange the steak pinwheels on a platter and garnish with fresh parsley. Serve with a side salad, roasted veggies, or mashed potatoes for a complete meal.
