Prepare the Crust:

  1. Grease a 9-inch springform pan.
  2. Combine the chocolate sandwich cookie crumbs with melted butter and press into the bottom of the pan. Freeze for 10 minutes.

Prepare the Cookie Dough:

  1. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add milk and vanilla extract, mix well.
  3. Stir in the flour, blend until smooth, then fold in the mini chocolate chips.

Assemble the Cake:

  1. Spread half of the softened vanilla ice cream over the crust, then add half of the cookie dough in chunks. Freeze for 1 hour.
  2. Add the chocolate chip cookie dough ice cream, followed by the remaining cookie dough in chunks. Freeze for another hour.
  3. Spread the remaining vanilla ice cream over the top and freeze for 4-6 hours, or overnight, until firm.

Make the Ganache:

  1. Heat the heavy whipping cream in a saucepan until it begins to simmer.
  2. Pour over the chocolate chips and let sit for 2 minutes. Stir until smooth.

Serve the Cake:

  1. Remove the cake from the springform pan and pour the ganache over the top.
  2. Freeze for 30 minutes before serving.
