Prepare the Crust:
- Grease a 9-inch springform pan.
- Combine the chocolate sandwich cookie crumbs with melted butter and press into the bottom of the pan. Freeze for 10 minutes.
Prepare the Cookie Dough:
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add milk and vanilla extract, mix well.
- Stir in the flour, blend until smooth, then fold in the mini chocolate chips.
Assemble the Cake:
- Spread half of the softened vanilla ice cream over the crust, then add half of the cookie dough in chunks. Freeze for 1 hour.
- Add the chocolate chip cookie dough ice cream, followed by the remaining cookie dough in chunks. Freeze for another hour.
- Spread the remaining vanilla ice cream over the top and freeze for 4-6 hours, or overnight, until firm.
Make the Ganache:

- Heat the heavy whipping cream in a saucepan until it begins to simmer.
- Pour over the chocolate chips and let sit for 2 minutes. Stir until smooth.
Serve the Cake:
- Remove the cake from the springform pan and pour the ganache over the top.
- Freeze for 30 minutes before serving.
