- Bake the Potatoes:
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Coat the potatoes in olive oil and sprinkle with sea salt. Bake for 50–60 minutes, until fork-tender. - Prepare the Steak Bites:
Dry the steak pieces and season them with Cajun seasoning and kosher salt.
In a skillet, heat 2 tbsp avocado oil over medium-high heat. Sear the steak undisturbed for 2 minutes, then flip and cook for another minute.
Reduce the heat, add 2 tbsp butter and garlic, and cook until fragrant. Remove steak bites and set aside. - Make the Garlic Parmesan Sauce:
Using the same skillet, melt 2 tbsp butter and sauté the remaining garlic for 30 seconds.
Pour in the heavy cream and let it simmer gently. Stir in Parmesan, red pepper flakes, parsley, lemon juice, and black pepper. Whisk until the sauce thickens (about 3–5 minutes). - Assemble the Dish:
Slice the baked potatoes and fluff the insides with a fork. Spread a bit of butter inside each potato.
Generously spoon the garlic Parmesan sauce over the potatoes and top with the steak bites. - Serve:
Sprinkle parsley on top and serve warm.
